Ima's Pamangan: A Bataan favorite for authentic Filipino home-cooked food

When asked what's the secret of Ima's Pamangan dishes, the owner said she tells her staff to assume it's them who are going to eat the food, like they are working in a far place and craving to taste food from home, "Pag nagluluto kayo, akuin nyo na kayo ang kakain... na kayo ang masisiyahan... na para bang nagta-trabaho ka sa malayo, sabik kang matikman ang luto ng nanay."

Ima Flora's Pamangan is a family-owned restaurant with a handful of Kapampangan family recipes. Located along Gov JJ Linao Highway, at the corner of the road leading to Mt. Samat Shrine, this diner serves lunch or dinner buffet for Php 200 per person.
Outside has plenty of space for parking. The interior has a simple, homey design with several wooden tables and benches for group diners.

To the right of the door, in front of the long counter, is the restaurant’s "pasalubong" corner. You can buy Bataan's pride snacks, drinks, condiments, and sweet treats.
Ima's Pamangan is best known for Kapampangan style cooking with menu mainstays like adobo, sisig, higado, dinuguan, pancit guisado, adobong balut, bicol express, chop suey, etc., but it also knows a thing or two about frying. The fried crablets, tuyo, and other deep-fried seafood are crunchy and golden. These dishes are made even more interesting with vinegar sauce.
I liked all the dishes I tried here but the ones that stood out and probably had become my favorites were adobong balut, pancit guisado, ensalada and chop suey. I highly recommend you try their dessert. It's mouthwatering and would definitely satisfy your sweet tooth.
